I tend to not have syrup in my house for a couple of reasons:
1) We rarely have pancakes and I don't own a waffle iron
2) I only like real maple syrup, but (again) I rarely use it so it tends to go bad, and
3) I can never remember to buy it
What I tend to use to dress my pancakes is a simple fruit compote. A little bit of jelly, some frozen berries, a splash of water and heat and you've got something pretty yummy!
Here's the recipe:
1/4 cup of jelly or fruit preserves (I used fig and strawberry)
3/4 cup of frozen berries
(Any berries will do. You could also use frozen peaches.)
1/4 cup water
1 pinch salt
1/4 tsp vanilla
Bring the mixture to a boil and let simmer for fifteen minutes or so over medium-low heat
or until the mixture is reduced and the berries are starting to fall apart.
Pour on to your pancakes or waffles, or serve on the side for dipping.
